Gazpacho is a light and refreshing Mexican soup that is served cold.

4 cups tomato juice (1 L)
1/3 cup red wine vinegar (75 ml)
1 green pepper, finely chopped
1 cucumber, finely chopped
2 tomatoes, finely diced
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons chive or finely chopped green onion, chopped (30 ml)
1/4 teaspoon paprika (1 ml)
In a large bowl, stir together tomato juice, vinegar, green pepper, cucumber, tomatoes, onion, garlic, chives and paprika.
Garnish with more chopped chives or finely chopped green onions.
Chill for 3 hours before serving.
