Gazpacho is a light and refreshing Mexican soup that is served cold.

Cold soup recipes like this are perfect for warm weather days, especially for times when local tomatoes are at their peak and so sweet.

The red wine vinegar adds a nice touch of acidity that brings all of the other flavors together and kicks it up.

Gazpacho soup (sometimes mistakenly spelled gaspacho) is extremely healthy for us, especially if you use organic, locally grown vegetables. Find more information about why this soup recipe is so healthy for us below in our "Did You Know?" section.

4 cups tomato juice (1 L)
1/3 cup red wine vinegar (75 ml)
1 green pepper, finely chopped
1 cucumber, finely chopped
2 tomatoes, finely diced
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons chive or finely chopped green onion, chopped (30 ml)
1/4 teaspoon paprika (1 ml)

In a large bowl, stir together tomato juice, vinegar, green pepper, cucumber, tomatoes, onion, garlic, chives and paprika.

Garnish with more chopped chives or finely chopped green onions.

Chill for 3 hours before serving.

Serves 6.
