Veggie burgers are a staple for vegetarians, but even meat eaters should give this recipe a try.
You will be surprised at how good this mixture of brown rice, lentils and vegetables really is.
It takes a while to cook all of the ingredients together, but really all you are doing is putting everything in a pot and letting it cook while you go off to do something else.

1/2 cup dry lentils
1/2 cup raw brown rice
1 chopped onion
1 tablespoon vegetable oil
2 cups liquid (stock or water)
1/2 cup tomato juice
1 tablespoon tamari soy sauce
1 diced potato
1 diced tomato
1 carrot, sliced
1 stalk celery, sliced
wheat germ
whole wheat flour
salt and pepper to taste
oil for frying
Toppings and "go withs" include:
pita bread or whole wheat buns
shredded lettuce
shinly sliced onions
sliced tomatoes
sprouts
cheese
hummus
Put the lentils, rice, onion, oil, stock, tamari sauce and tomatoe juice into a 2 quart pot. Bring the mixture to a boil, cover, and simmer for 30 minutes. Add the potato, tomato, carrot and celery and bring it to a boil. Cover and simmer 20 to 30 minutes longer. If there is liquid left in the pot, drain it off, but reserve it.
Mash the mixture and let it cool. Get the proper consistency by adding a bit of the reserved liquid if it is dry, or wheat germ or whole wheat flour if it is too moist. Shape it into patties. Coat the patties with wheat germ and brown them in hot oil for 5 minutes per side.
Place one patty into a pita bread or whole wheat bun and add whatever toppings you enjoy. Or just eat them alone, with no bread, topped with your favorite toppings.
The recipe should make 6 to 8 lentil patties or more.
Serving Suggestion: Here is a great meal idea. These veggie burgers would be delicious served with couscous salad and our lemon roasted beets for a delicious vegetarian meal.
